Old Fashioned Peach Cobbler

Although Georgia is known for its peaches,  I think any organic and fresh peaches are pretty darn good.  I was beyond happy when my neighbors generously gave me a giant basket of fresh peaches off the the peach tree at their house.  I had been eyeing the peaches all summer and always wanted to try one of them.  And now I have more peaches than I know what to do with!


Choosing peaches: You want to pick ones that are rich in color, firm but a little soft, and very fragrant.

I was over at a friends house and decided to bring a bag of peaches to eat raw or make a dish out of.  I searched my favorite website- Pinterest – for a delicious peach recipe and found a delicious looking old fashioned peach cobbler recipe and decided to give it a shot.  Peach is a perfect summer flavor.  I loved this recipe for cobble because it is very easy to make and tasted AMAZING.  The crumbled part actually was not very sweet and resembling cake a little bit which was the perfect contrast to the sweet peaches and cinnamon topping.

Old Fashioned Peach Cobbler Recipe

For the filling
  1. 8 fresh peaches, peeled, pitted and sliced
  2. 1/4 cup white sugar
  3. 1/4 cup brown sugar
  4. 1/2 teaspoon ground cinnamon
  5. 1/8 teaspoon ground nutmeg
  6. 1 tablespoon fresh lemon juice
  7. 1/2 teaspoon almond or vanilla extract
  8. 2 teaspoons cornstarch
For the topping
  1. 1 cup all-purpose flour
  2. 1/4 cup white sugar
  3. 1/4 cup brown sugar
  4. 1 teaspoon baking powder
  5. 1/2 teaspoon salt
  6. 6 tablespoons unsalted butter, chilled and cut into small pieces
  7. 1/4 cup boiling water
  8. 3 tablespoons white sugar
  9. 1 teaspoon ground cinnamon
  10. Vanilla ice cream, for serving
  1. Preheat oven to 425 degrees. In a large bowl, combine sliced peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/2 teaspoon cinnamon, nutmeg, lemon juice, vanilla or almond extract, and cornstarch.
  2. Toss to coat peaches evenly and pour into a 2-quart baking dish or 5-6 individual baking dishes. Bake in preheated oven for 10 minutes.
  3. Meanwhile, in a medium bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with a pastry cutter or your fingertips until mixture resembles coarse meal. Stir in boiling water until just combined. In a small bowl, stir together the 3 tablespoons of white sugar with 1 teaspoon of cinnamon.
  4. Remove peaches from oven, and drop spoonfuls of topping over them. Sprinkle the cinnamon and sugar mixture evenly over the topping. Bake for 25-35 minutes, or until topping is golden brown. Serve warm with vanilla ice cream.
